The stomach is designed to function at a very low pH. Most foods
are acidic and human physiology is geared towards handling mostly
acidic intake. The enzymes that process digestion are activated
by low pH. I would just direct you to a text book that contains
a chapter on digestion in any of the disciplines including nutrition,
biochemistry, physiology, etc. Alkaline adjustments would only
be recommended in the case of an over acidic stomach.
